easy & fluffy Cinnamon Rolls made from scratch – Recipe

Honestly, who can say NO to ovenfresh cinnamon rolls? Even better when they’re homemade, low sugar and so fluffy that you can’t stop eating them, right? 😂 With our very versatile bread mix EINBACK you can make easy & fluffy cinnamon rolls from scratch without a hustle. Your friends and family will love you to the moon and back!

As you know us, we love organic ingredients. Therefore, we add to our organic flour-mix some organic butter, sugar, egg, Ceylon cinnamon and milk. For the frosting, it is your choice what you want to choose. Because we’re not fans of the typical thick cream cheese and butter frosting. We usually go with only powder sugar the German way. But, for this recipe we found a new favorite light and bright frosting for our cinnamon rolls. We chose a lemony sour cream frosting for a little extra tang to balance the sweetness.

Homemade and ovenfresh – fluffy Cinnamon Rolls

Many countries have a cinnamon filled yeasted roll in some way. In Sweden they’re called ‘Kanelbullar’ and in Germany ‘Schneckennudel’. Our German translation for that is actually ‘Snail Noodle’ 😂. But the main difference is that we fill it with grounded nuts and only a hint of cinnamon. More on that in a later post…

How you make 12 fluffy Cinnamon Rolls

We recommend making this dough with a kitchen machine and the dough hook to ease the longer kneading process. NOTE: Use a digital scale to measure ALL ingredients in gramm (oz NOT fl.oz)!


Dough:
1/2 bag of EINBACK bread mix

200 g / 7 oz milk, divided (whole or 2%)
1 egg, whisked
2 TBS butter, unsalted + softened

Filling:

5 TBS butter, unsalted + softened
~1/3 Cup, heaped / ~70g (light) brown sugar

1 TBS Ceylon cinnamon

Note: When using different cinnamon, use less because those are stronger. Ceylon cinnamon is known for the higher quality and finer flavor. (…and is also healthier)

Frosting:

1 TBS butter, melted + cooled

1/3 Cup / 50g Sour Cream

0.5 TBS lemon juice

3/4 Cup / 70g powdered sugar, sifted

Note: The amount is enough to sprinkle loosley over the rolls. When you want more, just double it, but add the last TBS’s of powder sugar only as needed. It is very sweet!



Instructions for making easy Cinnamon Rolls

STEP 1 – Prepare the dough as stated on the package, just use only milk for the required liquid.

STEP 2 – When your dough is finished kneading (1-2 min to mix on low, plus ~15min on level 2-3, slowly increasing), it should be smooth, even and slightly tacky. Knead it 2-3x on the counter top, shape it round, cover it with plastic/dump kitchen towel and let rise for 70-80 min until 2-3x the size.

STEP 3 – Meanwhile, option-1) mix together the filling in a smaller bowl and set aside or option-2) smear the butter later direct on the dough and sprinkle the sugar-cinnamon mix over it.

STEP 3.1 – When you’re trying our sour cream frosting with lemon, mix all together and set aside. We love to put it in the fridge and take it towards the end of baking time.

STEP 3.2 – Prepare your 9×13″ baking pan with parchment paper.

STEP 4 – When the dough is ready, roll it evenly out to a rectangle 10″x18″. No extra flour is necessary. Nevertheless, if you need some, only dust your countertop very lightly. Loosen the dough from the surface from time to time that it does not stick too much.

Spread the filling equally onto the dough and make sure too leave the upper edge (1/2′) without so the dough can later stick easier together.

Now evenly roll up the dough via the longside and pinch the seam together. Turn the roll on the seam to cut it with a serrated knife in 12 equal pieces. Place the pieces into the pan with the seam towards each other. Cover again, set aside and let rise for 45-60min.

STEP 5 – Preheat the oven 40min into the rising time. These easy cinnamon rolls are ready to bake when they looking really puffy. Brush them generously with milk or half-half right before you pop them into the oven. Bake for ~20min until the outer rolls turn brown-ish. Rotate the pan in the last 10 min for even baking.



STEP 6– Let the rolls cool a couple of minutes and get your plates, coffee and frosting ready. Sprinkle the frosting over your single serve rolls & enjoy!

TiP: we love to add some chopped nuts on top for an extra touch of flavor. Here we used roasted hazelnuts, but almonds are a great pairing as well.

Sprinkle some nuts on top of your frosting and enjoy this delicious homemade cinnamon treat fresh from the oven. After they’re cooled you can easily freeze them as single rolls. That way you can thaw them as needed at room temperature and re-heat in the microwave for only a couple of second to get back that fluffiness.
