The easiest rustic Focaccia bread for beginners
Who says a Focaccia needs to be plain white? We bring you the easiest Focaccia in a rustic way with partially whole grain flour and flax seeds. And the best? You can make this Italian bread with ease in your own kitchen! No run for ingredients. No kneading required. Just add water and oil and let the dough do the rest.
All you need is one of our big-pack RHEINTALER bread mixes. You can make 2x Focaccia (9″x13″) with the whole bag or you can split it for 1 regular German Rheintaler loaf and another Foccacia. The bag is resealable, so you can store it easily for another time.
Make the easiest Focaccia with a rustic twist
For the following you need half of the RHEINTALER bread mix to make one 9″ x 13″ pan

Step 1 – Add the flour-mix to a large bowl (6qt) and mix it with 450g (16 oz) filtered water at room temperature until all flour is evenly and smoothly incorporated; use a fork or spatula. It becomes a very wet dough (high hydration) but that’s totally normal. Let it sit, covered, for 45 min.
Step 2 – Then lift the dough with wet fingers while grabbing it with both hands from below until it gets loose from the bowl. Fold it back into the bowl over itself (like a zig-zag move), turn the bowl 90° degrees and repeat the fold.
Step 3 – Rest for another 45 min, lift & fold it again with fingers. Cover with cling wrap and put it in the fridge for 18-24 hours. Fold it one more time during this proofing phase.
Step 4 – The day of baking, grease your baking pan very well with 0.5 TBS olive oil (not too much!). Take the dough out of the fridge and gently scrape the dough out of the bowl direct into your baking pan. Cover the pan and let it sit for 1.5 – 3 hours (depends on kitchen temperature) until the dough has spread out and almost fills the whole bottom of the pan.
Step 5 – Preheat the oven to 450°F. Brush the dough with more olive oil (up to 1 TBS), sprinkle rosemary and flaky sea salt over it and gently dimple into the dough with your fingers.
Bake the Foccacia 15-18 min until golden brown or to your liking. Eventually rotate the pan for even baking in the last ~5 min.
TIP: Top it with sliced tomatoes or cheese cubes and press those into the dough as well.
